What's for dinner?


Waffles...topped with fresh strawberries and whipping cream. A very refreshing dinner on a warm day. So here is our favorite waffle recipe:

OVERNIGHT WAFFLES

1/2 t instant yeast
2 c all-purpose flour
1 T sugar
1/2 t salt
2 c milk
8 T butter, melted and cooled
1/2 t vanilla extract (optional)

2 eggs

Before going to bed, combine the dry ingredients and stir in the milk, then the butter and vanilla. The mixture will be loose. Cover with plastic wrap and set aside overnight at room temperature.

In the morning preheat the waffle iron. Separate the eggs and stir the yolks into the batter. Beat the whites until they hold stiff peaks. Stir them gently into the batter.

Spread batter onto the waffle iron and bake until the waffle is done-about 3 to 5 minutes.

These waffles freeze well. Put in plastic storage bag and place in freezer. Defrost for 30 seconds in the microwave and warm in the toaster.

Instead of "overnight" waffles, I usually make "all day" waffles. I mix up the batter in the morning and let it sit on the counter all day until dinner time. All that's left to do for dinner is to add the eggs, whip some cream, cut some strawberries (which I usually do earlier in the day) and dinner is served. Mmmmm...Mmmmm...Good!

That my dear. Looks good. Sounds good and I bet was good. Now I am craving waffles for breakfast!

We love waffles for dinner but the last batch there was way too much left overs so this is perfect timing for us. Thanks for the recipe.

Okay, I am going to make these waffles right after I buy the whipping cream and strawberries - and probably a waffle iron too! I think I am going to dream about waffles tonight - yummy!
